  • 5 tbsp melted butter

Cheesecake Filling

  • 16 oz cream cheese, softened
  • 4 oz blue cheese, crumbled
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract

Optional Topping

  • Honey, for drizzling
  • Toasted walnuts
  • Thinly sliced figs or poached pears
  • Fresh thyme leaves or flaky sea salt

Instructions

  1. Prepare the crust: Preheat oven to 350°F (175°C). Combine crushed crackers and melted butter until evenly mixed. Press into the bottom of a springform pan. Bake for 10 minutes, then let cool.
  2. Make the filling: Beat softened cream cheese, blue cheese, and sugar until smooth. Add eggs one at a time, mixing just until combined. Fold in sour cream and vanilla extract.
  3. Bake the cheesecake: Pour the filling over the cooled crust. Place the pan in a water bath and bake at 300°F (150°C) for about 50–60 minutes until the center is just set and slightly jiggly. Turn off the oven and cool the cheesecake inside with the door slightly open for 1 hour.
  4. Chill: Remove from oven and refrigerate for at least 6 hours, preferably overnight, for the best flavor and texture.
  5. Add toppings (optional): Before serving, drizzle with honey and garnish with toasted nuts, fruit, or herbs depending on your flavor preference.
