Cheesecake Layer

  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract

Coconut Pecan Topping

  • 1 cup evaporated milk
  • ½ cup brown sugar
  • ¼ cup unsalted butter
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • ¾ cup chopped pecans

Instructions

  1. Make the Chocolate Cake Base: Melt sweetened chocolate and butter until smooth. Stir in sugar and eggs, then mix in flour and cocoa powder. Pour into a greased springform pan and bake at 325°F (160°C) for 15 minutes. Let cool slightly.
  2. Prepare the Cheesecake Layer: Beat cream cheese, sugar, and eggs until smooth. Add sour cream and vanilla. Pour over the cooled cake base. Bake in a water bath for 50–60 minutes until the center is slightly jiggly. Chill overnight.
  3. Make the Coconut Pecan Topping: In a saucepan, combine evaporated milk, brown sugar, butter, and egg yolks. Cook over medium heat until thickened. Stir in vanilla, coconut, and pecans. Let cool completely.
  4. Assemble and Garnish: Spread the coconut-pecan topping over the chilled cheesecake. Garnish with a drizzle of melted chocolate or extra pecans. Serve with whipped cream if desired.
